So far, our plants have survived 11 F degrees, dying back to the ground. In the colder end of its hardiness range, it's best to keep it as dry as possible during the winter. North of Zone 7b, it's best to dig and store the dormant tuber in fall and overwinter it in a garage or basement, held just above freezing.
